Turmeric in there. Water in there., Cook that joint till it is SOFT soft. About 3–4 whistles depending on your cooker., Open it up and mash the dal a little. Add more hot water if she too thick. Dalithoy supposed to be simple and pourable—we ain’t making cement., Season the situation, Add the slit green chillies, hing, and salt., Bring everything to a gentle boil for about 5 minutes., That’s basically the dal handled., But now comes the part where we put some respect on it., Tadka time, Small pan. Coconut oil or ghee., Get it hot., Mustard seeds go in., POP POP POP., Red chillies pull up., Curry leaves pull up., Whole pan start talking reckless., Pour that hot tadka straight over the dal and immediately cover the pot for a minute. Keep all that aroma trapped in there where it belongs., Eat, Hot rice., Dalithoy all over that thang., Little ghee on top if you know what’s good., Papad or pickle on the side., Mix it up with your hand and handle your business., Simple. Yellow. Garlicky? Hell no. Traditional dalithoy doesn’t need garlic and onions coming in there trying to be the main character.AAnonymous
